The name for this one is a nod to those long gone Siberian Tigers from the mountains of Korea, since it’s also a spicy 🐱. I call this one Crying Tiger
This beef jerky gets it heat from world famous Hatch green chilis. The heat is evenly balanced and about medium intensity. Earthy, spicy, fresh, and perfectly blended with toasted cumin, coriander, onion, and garlic, this one is a killer!
Kimchi is a spicy(in my case medium heat) fermented Napa cabbage condiment that is very popular in Korean cuisine. It is made with cabbage, daikon radish, green onion, garlic, Asian pear, Korean chili flakes(gochugaru) fish sauce, and various other seasonings.
Here she is! My wonderful lacto-fermented hot sauce and it came out great!! I would put it slightly below the heat level of a tobasco sauce, with tons of delicious chili flavor!

I make mine from scratch the old school way. I use nothing but hand sliced choice top round, smoked for hours over hardwood charcoal pellets.
I finish all my jerky with a glaze that adds flavor and moisture and I steam it to retain tenderness. You’ll never have a better piece of jerky!
I have a rotating array of flavors to fit anyone’s tastes including the ultra fiery Kicked in the peaches, earthy hatch green chili heat from Mean Green, medium sweet heat from Big Red 1, and sticky Gojira Tokyo Terriyaki
I use only quality ingredients that I source myself or make from scratch whenever possible
